The Russet potato, aslo know as the Baker or Burbank Russet, is a high starch or mealy potato. Varieties incude Washington State or Idaho. Horticulturist Luther Burbank developed it in 1872 in New England but never visited Idaho. They are best whipped, mashed, fryed or baked and break down nicely when cooked.
